TEXAS CHILI
Ingredients:
2 tablespoons vegetable oil
2 1/2 ll piece beef chuck or shoulder, cut into 1/2-inch cubes
1 large onion, diced
1/2 cup dry red wine
1 tablespoon all-purpose flour
5 tbsp chili powder
1 1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp ground red pepper (cayenne)
1 can (28 oz) crushed tomatoes
1/2 tsp salt
Accompaniments (optional):
Cooked rice, shredded Cheddar Cheese, sour cream, diced green onions, corn bread.
Procedure:
1. Heat oil in large, heavy pot over high heat. Add meat and onion; cook for 8 minutes, stirring after 3 minutes.
2. Combine wine, flour, chili powder, garlic powder, oregano, and red pepper in medium size bowl. Add to meat in pot, along with tomatoes and salt. Bring to a boil. Reduce heat to medium-low; simmer, uncovered, stirring, for about 50 minutes. If too thick, thin with a little water.
3. Serve with accompaniments if desired.
Makes 8 servings.
