2 tbsp vegetable oil
1 medium size onion, diced
3 cloves garlic, chopped
1 sweet green pepper, cored, seeded, and diced
1/4 cup chili powder
1 1/2 lbs ground turkey
1 can (28 oz) diced tomatoes
1 can (8 oz) tomato sauce
1/4 cup ketchup
1/2 tsp ground red pepper (cayenne) OPTIONAL
1 packet (.19 oz) instant beef-flavored broth granules
1/2 tsp salt
1 can (19 oz.) red kidney beans, drained and rinsed
Accompaniments (optional): Cooked rice, Sour Cream, Shredded Cheddar Cheese, Chopped Green Onions.
1. Heat oil in large pot over medium heat. Add onion, garlic, green pepper, and chili powder; saute for 10 minutes or until vegetables are tender. Add turkey; cook for 6 minutes, breaking up chunks with a wooden spoon.
2. Add diced tomatoes, tomato sauce, ketchup, ground red pepper, packet of instant broth, and salt; simmer, uncovered, stirring occasionally, for 20 minutes. Add kidney beans, cook for 4 minutes or until heated through.
3. Serve with accompaniments if desired.
