Similar to American style Beef Jerky

Ingredients
3 lb boneless chuck roast
1/4 cup soy sauce
Pinch of Hawaiian salt
3 cloves garlic, minced
1 teaspoon minced ginger root, optional

Instructions
Cut beef lengthwise into 1/2-inch thick strips. Combine remaining ingredients; add meat and marinate for 2 hours in the refrigerator. Put oven rack at the highest level in the oven. Place a pan or foil on oven bottom to catch drippings. Insert bent metal skewers or large, stretched-out paper clips into meat strips and hang on top oven rack, or place meat strips on cooling racks in oven. Dry in electric oven, with oven door ajar in the broil position, at 150°F to 200°F. Dry for 4 to 5 hours or until of "jerky" texture. Makes 10 to 12 servings.

Pipikaula may be sliced and fried with sliced Maui onions, choi sum, or watercress. Season with oyster sauce and chili pepper.
