POI MOCHI
Ingredients:

     1 box Mochiko Rice flour
     ½ tsp baking powder
     ½ box dark brown sugar
     2/3 bag poi
     1 can coconut milk
     ½ tsp salt
     1 bottle oil for frying

Directions:

1.      Mix flour, salt, and baking powder.
2.      Mix in sugar.
3.     Add the poi and then slowly add coconut milk until consistency is adequate for rolling. Not too wet and not too dry.
4.     Use a small ice cream scooper to drop into hot oil and fry until brown.
5.     Use a steep pan to deep fry. Once you put in and it rises to the top it is almost done.
